Not All Ice Cream Is Created Equal — Why Atelait Is Different

People ask us all the time, usually somewhere between meeting the sheep and taking their first bite: "What makes your ice cream different?" It's a fair question. There's a lot of ice cream out there, and plenty of it calls itself "artisan" or "handcrafted." So pull up a chair, and let me give you the honest answer.



We Raise the Animals. We Produce the Milk. We Make the Ice Cream.

That one sentence is the whole story, really. Every scoop of Atelait ice cream starts with our own dairy flock, raised right here on our farm. You can come meet them — and we hope you do. Twice a day, every day, we milk our sheep, and that fresh milk goes straight into our on-farm creamery. Not milk from a tanker truck. Not milk from a co-op three states away. Milk from animals we know by name.



Compare that to how most ice cream is made. Even a lot of small shops with charming storefronts are buying milk from large commercial dairies they've never visited — and honestly, never could visit, because that milk is blended from dozens of farms before it ever reaches them.


The Secret Most Ice Cream Shops Don't Tell You

Here's something that surprised us when we first got into this business: many ice cream shops don't actually make ice cream. They buy a ready-made liquid or powder "commercial base," stir in some flavoring, freeze it, and call it homemade.


We have never used a commercial base and we never will. Every single batch at Atelait starts from scratch — fresh milk, cream, eggs, and real flavors from real food. Read our label sometime. It's short. That's on purpose.


Now look at the label on a factory ice cream tub. Carrageenan, gums, emulsifiers, artificial flavors — ingredient lists that can run twenty items or more, most of them there to help the product survive weeks in a freezer truck and months on a shelf. That's not a recipe. That's engineering.


Why Sheep's Milk? Why A2?

All of our milk is 100% A2, which many folks find naturally easier to digest and gentler on the body. When milk from many farms gets blended together — the way it does in commercial production — you get A1, A2, or some mix of both, and there's simply no way to know what's in your scoop. When it all comes from one flock, on one farm, you know exactly what you're getting.


And sheep's milk makes an ice cream unlike anything else — rich, naturally creamy, and smooth without needing a single stabilizer to fake it.


Made by Hand, a Few Steps from the Pasture

Our ice cream is handcrafted in small batches in our on-farm creamery, not in a factory hundreds of miles away. When a big brand puts "fresh" on the carton, that's a marketing claim. When we say it, it's a fact you can verify with your own eyes — because you're welcome to walk our fields, meet the animals, and tour the creamery where it's made.

That's the real difference, when you get down to it. Factory ice cream has no farm story to tell. There are no animals to meet, no fields to walk — just a logo on a cardboard tub. We're a living, working farm, and every scoop carries that story with it.
